Ingredients
1 Serving
- 2 slices of whole-grain bread
- 1 egg
- 1/4 ripe avocados
- 1/3 tsp fresh cilantro
- 1/3 tsp butter
- Optional Ingredients: Fresh lime juice, unrefined salt, black pepper
Directions
- Toast bread slices to your liking. Mash avocado roughly with a fork and season with lime juice (if desired), then spread on one of the pieces of toast.
- Add a little fresh lime juice, salt and pepper to enhance flavor.
- Heat butter in pan and then crack egg into pan over medium heat in your preferred style (scrambled, sunny side up, poached, etc). Season with salt and pepper to taste.
- Place egg on remaining bread slice, sprinkle with chopped cilantro, then cover with the other slice (with avocado) to build a sandwich.
