Avocado and Egg Sandwich

When served with whole grain bread, this recipe of highly nutritious avocados and eggs is balanced in flavor and nutrients and makes a great breakfast or post workout meal.

Ingredients

1 Serving

  • 2 slices of whole-grain bread
  • 1 egg
  • 1/4 ripe avocados
  • 1/3 tsp fresh cilantro
  • 1/3 tsp butter
  • Optional Ingredients: Fresh lime juice, unrefined salt, black pepper

Directions

  1. Toast bread slices to your liking. Mash avocado roughly with a fork and season with lime juice (if desired), then spread on one of the pieces of toast.
  2. Add a little fresh lime juice, salt and pepper to enhance flavor.
  3. Heat butter in pan and then crack egg into pan over medium heat in your preferred style (scrambled, sunny side up, poached, etc). Season with salt and pepper to taste.
  4. Place egg on remaining bread slice, sprinkle with chopped cilantro, then cover with the other slice (with avocado) to build a sandwich.
